Chocolate Banana Sandwiches

INGREDIENTS (2 Servings)

4 slices of brioche

1 tbsp butter, melted

6 oz milk chocolate, broken into chunks

1 banana, sliced

DIRECTIONS (Prep + Cook Time: 15 minutes)

Brush the brioche slices with butter. Spread chocolate and banana on 2 brioche slices. Top with the remaining 2 slices to create 2 sandwiches. Arrange the sandwiches on the air fryer basket and cook for 8 minutes at 380 F, turning once halfway through. Serve with vanilla ice cream.

Orange-Flavored Cupcakes

INGREDIENTS (5 Servings)

Lemon Frosting:

1 cup natural yogurt Sugar to taste

1 orange, juiced

1 tbsp orange zest

7 oz cream cheese

Cake:

2 lemons, quartered

½ cup flour + extra for basing

¼ tsp salt

2 tbsp sugar

1 tsp baking powder

1 tsp vanilla extract

2 eggs

½ cup softened butter

2 tbsp milk

DIRECTIONS (Prep + Cook Time: 25 minutes)

In a bowl, add yogurt and cream cheese; mix until smooth. Add orange juice and zest; mix well. Gradually add sweetener to taste, stirring until smooth. Make sure the frost is not runny. Set aside. For cupcakes: Place the lemon quarters in a food processor and process it until pureed. Add the baking powder, softened butter, milk, eggs, vanilla extract, sugar, and salt. Process again until smooth. Preheat air fryer to 360 F. Flour the bottom of 10 cupcake cases, and spoon the batter into the cases ¾ way up. Place them in the air fryer and bake for 12 minutes. Once ready, remove and let cool. Design the cupcakes with the frosting.

Chorizo & Vegetable Bake

INGREDIENTS (4 Servings)

4 chorizo sausages

½ tsp thyme

2 mixed bell peppers, sliced

½ pound Brussels sprouts, trimmed and halved

1 red onion, sliced

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 350 F and spray the basket with cooking spray. In a bowl, mix Brussels sprouts, bell peppers, red onion, thyme, salt, and black pepper; set aside. Arrange the chorizo sausages on the bottom of the air fryer basket. Cook for 6 minutes. Slide-out the basket, flip chorizo, and add the vegetable mixture; cook for another 8 minutes. Serve warm.

Pork & Apple Burger Patties

INGREDIENTS (2 Servings)

12 oz ground pork

1 apple, peeled and grated

1 cup breadcrumbs

2 eggs, beaten

½ tsp ground cumin

½ tsp ground cinnamon

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 20 minutes)

In a bowl, add pork, apple, breadcrumbs, cumin, eggs, cinnamon, salt, and black pepper and mix with hands. Shape into 2 even-sized burger patties. Arrange the patties on a greased air fryer basket and cook for 14 minutes at 340 F, turning once halfway through. Serve.

Pork Belly the Philippine Style

INGREDIENTS (4 Servings)

2 lb pork belly, cut in half, blanched

1 bay leaf, crushed

2 tbsp soy sauce

3 garlic cloves, minced

1 tbsp peppercorns

1 tbsp peanut oil

DIRECTIONS (Prep + Cook Time: 50 minutes + marinating time)

Take a mortar and pestle, and place the bay leaf, garlic, salt, peppercorns, and peanut oil in it. Smash until a paste-like consistency form. Whisk the paste with soy sauce. Pierce the skin of pork belly with a fork. Rub the mixture onto the meat, wrap the pork with a plastic foil and refrigerate for 2 hours. Preheat the fryer to 350 F. Place the pork inside and cook for 30 minutes, flipping once halfway through. Serve.
