INGREDIENTS (2 Servings)

3 slices bread, toasted

1 tsp smoked paprika

2 eggs

1 tsp dijon mustard

4 ½ oz cheddar cheese, grated

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 15 minutes)

In a bowl, whisk the eggs, stir in mustard, cheddar cheese, and paprika. Season with salt and pepper. Spread the mixture on the toasts. Cook the slices for 10 minutes at 360 F.

Fava Bean Falafel Bites

INGREDIENTS (4 Servings)

1 tbsp olive oil

1 can (15.5-oz) fava beans, drained

1 red onion, chopped

2 tsp chopped fresh cilantro

1 tsp ground cumin

Salt to taste

1 garlic clove, minced

3 tbsp flour

4 lemon wedges to serve

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 380 F. In a food processor, blitz all the ingredients until a thick paste is formed. Shape the mixture into ping pong-sized balls. Brush with olive oil and insert in the greased air fryer basket. Cook for 12 minutes, flipping once. Remove to a platter and serve with lemon wedges.

Ham & Egg Cups

INGREDIENTS (4 Servings)

5 eggs, beaten

1 cup ham, chopped

1 cup milk

1 ½ cups Swiss cheese, grated

Salt and black pepper to taste

¼ cup green onions, chopped

½ tsp thyme

DIRECTIONS (Prep + Cook Time: 25 minutes)

Preheat air fryer to 350 F. In a bowl, mix beaten eggs, thyme, onion, salt, Swiss cheese, pepper, and milk. Divide ham between 4 baking forms and pour the egg mixture over. Place the forms in the air fryer basket and cook for 15 minutes. Serve.

Mexican Chorizo & Beef Empanadas

INGREDIENTS (4 Servings)

2 garlic cloves, minced

½ cup green bell pepper, chopped

1 shallot, chopped

7 oz chorizo, chopped

½ pound ground beef

4 dough discs

1 cup shredded Mexican blend cheese

2 tbsp vegetable oil

¼ cup chunky salsa

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 35 minutes)

Heat the vegetable oil in a pan over medium heat and sauté bell pepper, garlic, and shallot for 4 minutes or until tender. Add the ground beef and chorizo and cook for 5-6 minutes. Season with salt and pepper. Pour in chunky salsa and cook, stirring occasionally, until the sauce thickens, 5 minutes. Preheat air fryer to 390 F. Divide the meat mixture and cheese between the dough discs. Fold them in half over the filling; press and seal the edges with a fork. Spritz with cooking spray and transfer to the air fryer basket. Cook for 12 minutes, turning once. Remove and allow to cool slightly before serving.

Tender Balsamic Ribeye Steak

INGREDIENTS (4 Servings)

4 ribeye steaks

1 tbsp balsamic vinegar

½ tbsp Italian seasoning

2 tbsp olive oil

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 15 minutes + marinating time)

Preheat air fryer to 360 F. In a bowl, combine all the ingredients. Cover and leave to marinate in the fridge for 30 minutes. Place the beef in the basket and cook for 10 minutes, flipping once halfway through. Serve warm.

Fruity Pear & Ham

INGREDIENTS (4 Servings)

1 pound pears, halved

1 ½ pound smoked ham

1 ½ cups brown sugar

¾ tbsp allspice

1 tbsp apple cider vinegar

1 tsp black pepper

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 330 F. Place the ham in a baking dish. In a bowl, mix pears, brown sugar, cider vinegar, pepper, and allspice. Place the mixture in a frying pan and fry for 2-3 minutes. Pour the mixture over ham. Cook in the air fryer for 15 minutes. Serve ham with hot sauce.
