Raspberry & Vanilla Pancakes

INGREDIENTS (4 Servings)

2 cups all-purpose flour

1 cup milk

3 eggs, beaten

1 tsp baking powder

1 cup brown sugar

1 ½ tsp vanilla extract

½ cup frozen raspberries, thawed

2 tbsp maple syrup

A pinch of salt

Cooking spray for greasing

DIRECTIONS (Prep + Cook Time: 15 minutes)

Preheat air fryer to 370 F. In a bowl, mix flour, baking powder, salt, milk, eggs, vanilla extract, sugar, and maple syrup, until smooth. Stir in the raspberries. Do it gently to avoid coloring the batter. Grease a baking dish with cooking spray. Drop the batter into the dish. Just make sure to leave some space between the pancakes. Cook for 10 minutes.

Teriyaki Chicken Wings

INGREDIENTS (4 Servings)

1 pound chicken wings

1 cup soy sauce, divided

½ cup brown sugar

½ cup apple cider vinegar

2 tbsp fresh ginger, minced

1 garlic clove, minced

1 tsp finely ground black pepper

2 tbsp cornstarch

2 tbsp cold water

1 tsp sesame seeds

DIRECTIONS (Prep + Cook Time: 30 minutes+ marinating time)

In a bowl, add chicken wings, and pour in half a cup of soy sauce. Refrigerate for 20 minutes. Drain and pat dry. Arrange wings on the greased air fryer and cook for 14 minutes at 380 F, turning once. In a skillet over medium heat, stir sugar, remaining soy sauce, vinegar, ginger, garlic, and black pepper. Cook for 4 minutes. Dissolve 2 tbsp of cornstarch in cold water and stir in the sauce until it thickens, about 2 minutes. Pour the sauce over wings and sprinkle with sesame seeds. Serve.

Beef & Tomato Meatballs

INGREDIENTS (4 Servings)

1 small onion, chopped

1 pound grounded beef

1 tbsp fresh parsley, chopped

½ tbsp fresh thyme leaves, chopped

1 whole egg, beaten

3 tbsp breadcrumbs

Salt and black pepper to taste

1 cup tomato sauce

DIRECTIONS (Prep + Cook Time: 25 minutes)

Preheat air fryer to 390 F. In a bowl, mix all ingredients, except for tomato sauce. Roll the mixture into 10-12 balls. Place the balls in a greased baking dish. Cook in the air fryer for 8 minutes. Pour the tomato sauce over the balls and cook for 5 minutes at 300 F. Gently stir and serve.

Ginger-Garlic Beef Ribs with Hot Sauce

INGREDIENTS (2 Servings)

1 rack rib steak

Salt to taste

1 tsp white pepper

1 tsp garlic powder

½ tsp red pepper flakes

1 tsp ginger powder

3 tbsp hot sauce

DIRECTIONS (Prep + Cook Time: 35 minutes)

Preheat air fryer to 360 F. Season the rib rack with salt, garlic, ginger, white pepper, and red pepper flakes. Place in the fryer’s basket and cook for 15 minutes. Turn the ribs and cook further for 15 minutes. Let sit for 3 minutes before slicing. Plate and drizzle hot sauce over to serve.

Burgundy Beef Casserole

INGREDIENTS (4 Servings)

1½ pounds beef steak

1 package egg noodles, cooked

1 ounce dry onion soup mix

1 can (14.5 oz ) cream mushroom soup

2 cups mushrooms, sliced

1 whole onion, chopped

½ cup beef broth

¼ cup Pinot Noir red wine

3 garlic cloves, minced

DIRECTIONS (Prep + Cook Time: 35 minutes)

Preheat air fryer to 360 F. Drizzle onion soup mix all over the meat and transfer to a baking dish. In a bowl, mix mushroom soup, garlic, beef broth, red wine, onion, mushrooms, and mushroom soup. Top the meat with the prepared mixture. Place the dish in the air fryer and cook for 25 minutes. Serve with the cooked egg noodles.
