Roasted Rosemary Squash


INGREDIENTS (2 Servings)

1 lb butternut squash, cut into wedges

1 tbsp dried rosemary

2 tbsp olive oil

1 tbsp maple syrup

1 cup goat cheese, crumbled

Salt to season

DIRECTIONS (Prep + Cook Time: 30 minutes)

Preheat air fryer to 350 F. Brush the squash with olive oil and season with salt and rosemary. Place in the air fryer basket and cook for 20 minutes, flipping once halfway through. Top with goat cheese and drizzle with maple syrup. Serve.

Cauliflower Rice with Tofu

INGREDIENTS (4 Servings)

½ block tofu, crumbled

½ cup diced onions

2 tbsp soy sauce

1 tsp turmeric

1 cup diced carrot

Cauliflower:

3 cups cauliflower rice

2 tbsp soy sauce

½ cup chopped broccoli

2 garlic cloves, minced

1 ½ tsp toasted sesame oil

1 tbsp minced ginger

½ cup frozen peas

1 tbsp rice vinegar

DIRECTIONS (Prep + Cook Time: 30 minutes)

Preheat air fryer to 370 F. Combines the tofu with onions, 2 tbsp of soy sauce, turmeric, and carrots in a baking dish. Transfer to the air fryer and cook for 10 minutes. Place all cauliflower ingredients in a large bowl; mix to combine. Add the cauliflower mixture to the tofu and stir to combine; cook for 12 minutes. Serve warm or chilled.

Eggplant & Zucchini Chips

INGREDIENTS (4 Servings)

1 large eggplant, cut into strips

1 zucchini, cut into strips

½ cup cornstarch

3 tbsp olive oil

Salt to season

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 390 F. In a bowl, stir in cornstarch, salt, pepper, olive oil, eggplants, and zucchini. Place in the air fryer basket and cook for 12 minutes, shaking once halfway through. Serve warm.

Air-Fried Sweet Potato

INGREDIENTS (4 Servings)

½ tsp salt

½ tsp garlic powder

½ tsp cayenne pepper

¼ tsp cumin

3 tbsp olive oil

3 sweet potatoes, cut into wedges

2 tbsp chopped fresh parsley

DIRECTIONS (Prep + Cook Time: 30 minutes)

In a bowl, mix salt, garlic powder, chili powder, and cumin. Whisk in olive oil and add the potatoes; toss to coat. Arrange on the air fryer, without overcrowding, and cook for 20 minutes at 380 F; shake regularly to get crispy on all sides. Sprinkle with parsley and serve!

Cabbage Steaks

INGREDIENTS (3 Servings)

1 cabbage head

1 tbsp garlic paste

2 tbsp olive oil

Salt and black pepper to taste

2 tsp fennel seeds

DIRECTIONS (Prep + Cook Time: 25 minutes)

Preheat air fryer to 350 F. Cut the cabbage into 1 ½-inch slice. In a small bowl, combine all the other ingredients; brush cabbage with the mixture. Arrange the steaks on the air fryer basket and cook for 15 minutes, flipping once halfway through. Serve.

Stuffed Mushrooms with Bacon & Cheese

INGREDIENTS (4 Servings)

8 button mushrooms

1 garlic clove, minced

Salt and black pepper to taste

4 slices bacon, chopped

¼ cup grated cheddar cheese

1 tbsp olive oil

1 tbsp chopped parsley

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 390 F. In a bowl, add olive oil, bacon, cheddar cheese, parsley, salt, pepper, and garlic. Mix well. Cut the stalks of the mushroom off and fill each cup with the bacon mixture. Place the stuffed mushrooms in a greased air fryer basket and cook at 390 F for 8 minutes. Serve with salad.

Veggie Meatballs

INGREDIENTS (3 Servings)

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp flax meal

2 cups cooked chickpeas

½ cup sweet onions

½ cup grated carrots

½ cup roasted cashews

Juice of 1 lemon

½ tsp turmeric

1 tsp cumin

1 tsp garlic powder

1 cup rolled oats

DIRECTIONS (Prep + Cook Time: 30 minutes)

Combine oil, onions, and carrots into a baking dish and cook in the air fryer for 6 minutes at 350 F. Ground the oats and cashews in a food processor. Remove to a large bowl. Process the chickpeas with the lemon juice and soy sauce in the food processor until smooth. Add them to the bowl as well. Add onions and carrots to the chickpeas. Stir in the remaining ingredients; mix well. Make meatballs out of the mixture. Increase the temperature to 370 F and cook for 12 minutes, shaking once. Serve.
