Tomato Sandwiches with Feta & Pesto


INGREDIENTS (2 Servings)

1 heirloom tomato

1 (4- oz) block Feta cheese

1 small red onion, thinly sliced

1 garlic clove Salt to taste

2 tsp + ¼ cup olive oil

1 ½ tbsp toasted pine nuts

2 tbsp chopped parsley

¼ cup grated Parmesan cheese

¼ cup chopped basil

DIRECTIONS (Prep + Cook Time: 25 minutes)

Add basil, pine nuts, garlic, Parmesan, and salt to a food processor. Process while slowly adding ¼ cup of olive oil. Preheat air fryer to 390 F. Slice feta cheese and tomato into ½ inch circular slices. Spread the pesto on the tomato slices. Top with feta cheese and onion and drizzle the remaining olive oil all over. Place the tomato inside the air fryer basket and cook for 6-8 minutes. Remove to a serving platter, sprinkle lightly with salt and top with parsley. Serve.

Turmeric Crispy Chickpeas

INGREDIENTS (4 Servings)

1 (15-oz) can chickpeas, rinsed

1 tbsp butter, melted

½ tsp dried rosemary

¼ tsp turmeric Salt to taste

DIRECTIONS (Prep + Cook Time: 20 minutes)

Preheat air fryer to 380 F. In a bowl, combine together chickpeas, butter, rosemary, turmeric, and salt; toss to coat. Place the in the air fryer basket and cook for 6 minutes. Slide-out the basket and shake; cook for another 6 minutes.

Air Fried Halloumi with Veggies

INGREDIENTS (2 Servings)

6 oz halloumi cheese, cubed

2 zucchinis, cut into even chunks

1 large carrot, cut into chunks

1 large eggplant, peeled, cut into chunks

2 tsp olive oil

1 tsp dried mixed herbs

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 15 minutes)

In a bowl, add halloumi, zucchini, carrot, eggplant, olive oil, herbs, salt, and pepper. Transfer to the air fryer basket and cook for 14 minutes at 340 F, shaking once. Top with mixed herbs to serve.

Sweet Potato French Fries

INGREDIENTS (4 Servings)

½ tsp salt

½ tsp garlic powder

½ tsp chili powder

¼ tsp cumin

3 tbsp olive oil

4 sweet potatoes, cut into thick strips

DIRECTIONS (Prep + Cook Time: 30 minutes)

In a bowl, mix salt, garlic powder, chili powder, and cumin and whisk in oil. Coat the strips well in this mixture and place them in the fryer’s basket. Cook for 20 minutes at 380 F, shaking once until crispy.

Cheesy Vegetable Quesadilla

INGREDIENTS (1 Serving)

2 flour tortillas

¼ cup shredded gouda cheese

¼ yellow bell pepper, sliced

¼ zucchini, sliced

½ green onion, sliced

1 tbsp cilantro, chopped

1 tsp olive oil

DIRECTIONS (Prep + Cook Time: 15 minutes)

Preheat air fryer to 390 F. Grease the air fryer basket with cooking spray. Place a flour tortilla in the air fryer basket and top with gouda cheese, bell pepper, zucchini, cilantro, and green onion. Cover with the other tortilla and brush with olive oil. Cook for 10 minutes until lightly browned. Cut into 4 wedges and serve.

Crispy Air-Fried Tofu

INGREDIENTS (4 Servings)

14 oz firm tofu, cut into

½-inch thick strips

2 tbsp olive oil

½ cup flour

½ cup crushed cornflakes

Salt and black pepper to taste

DIRECTIONS (Prep + Cook Time: 20 minutes)

On a plate, mix flour, cornflakes, salt, and black pepper. Dip each tofu strip into the mixture to coat, brush with oil and arrange them on the fryer’s basket. Cook for 14 minutes at 360 F, turning once halfway through. Serve.
